These grilled chicken skewers are easy and have the sweet flavor of orange marmalade marinade, smokiness of grilling. Then when you pair with the zestiness of the sesame dip and grilled vegetables you have created a divinely, scrumptious dinner.

Cut chicken breast lengthwise into 1-inch strips, sprinkle with salt and pepper, then set aside.
In a medium bowl whisk together lemon juice, chicken broth, lemon peel, and marmalade.
Pour marinade into a ziplock baggie and add chicken. Seal ziplock baggie and massage the marinade into the chicken for a minute. Refrigerate for 1-4 hours, turn the bag occasionally. Place the wooden skewers in water for about ½ hour.
Prepare dipping sauce – In a small bowl add honey, mustard, mayonnaise, and sesame seeds. Stir until all ingredients are combined. Refrigerate until ready to serve.
Drain the chicken and discard remaining marinade. Thread chickens strips on prepared wooden skewers.
Preheat grill and spray with a non-stick spray. Then place skewers on a grill. Cover, and grill on medium heat for about 10 to 12 minutes or until no longer pink in the middle. Turn occasionally for even cooking.
Serve with prepared dipping sauce and enjoy!

In reality, most of the flavor is absorbed in the meat during the marinading process and very little remains after cooking them. I think the little that remains is fine for a keto diet.
