Easy Grilled Chicken Skewers Recipe

These grilled chicken skewers are easy and have the sweet flavor of orange marmalade marinade, smokiness of grilling. Then when you pair with the zestiness of the sesame dip and grilled vegetables you have created a divinely, scrumptious dinner.  

Easy Grilled Chicken Skewers

 6 Chicken Breasts or if you prefer Chicken Thighs about 12
 ¼ cup Lemon Juice
 1 cup Marmalade - Orange or any flavor you prefer
 1 cup Chicken Broth
 1 tbsp Lemon Rind Grated
 ½ tsp Salt
 ¼ tsp Pepper
 ½ cup Honey
 ¼ cup Ground Mustard
 4 tbsp Mayonnaise
 2 tbsp Roasted Sesame
 8 Bamboo Skewers
Method

Cut chicken breast lengthwise into 1-inch strips, sprinkle with salt and pepper, then set aside.

In a medium bowl whisk together lemon juice, chicken broth, lemon peel, and marmalade.

Pour marinade into a ziplock baggie and add chicken.  Seal ziplock baggie and massage the marinade into the chicken for a minute.  Refrigerate for 1-4 hours, turn the bag occasionally. Place the wooden skewers in water for about ½ hour.

Prepare dipping sauce – In a small bowl add honey, mustard, mayonnaise, and sesame seeds.  Stir until all ingredients are combined. Refrigerate until ready to serve.

Drain the chicken and discard remaining marinade.  Thread chickens strips on prepared wooden skewers.

Preheat grill and spray with a non-stick spray.  Then place skewers on a grill.  Cover, and grill on medium heat for about 10 to 12 minutes or until no longer pink in the middle. Turn occasionally for even cooking.

Serve with prepared dipping sauce and enjoy!

    Ooooo, these sound so delicious! I love anything orange but unfortunately, I will have to find a keto version of the marmalade.Or just cheat a bit and enjoy! Thanks for sharing!

      In reality, most of the flavor is absorbed in the meat during the marinading process and very little remains after cooking them. I think the little that remains is fine for a keto diet.
