Instant Pot Roast Beef
Instant Pot Roast Beef is simply amazing! I wish I would have had access to an Instant Pot 40 years ago when I was first married, it is a total time saver! Not only does it save time it makes the most incredible, melt-in-your-mouth roast beef with carrots, potatoes, and gravy you have ever tasted, IN ONE POT!!!
About the Instant Pot
I had to experiment with 3 roasts to get this down just right! I use an Instant Pot DUO60 6 Qt 7-in-1 Multi-Use Programmable Pressure Cooker, Slow Cooker, Rice Cooker, Steamer, Sauté, Yogurt Maker and Warmer to make my recipes. If you do not have this model, just make sure you are using the correct cooking methods on your instant pot. Plus I cannot guarantee the correct times for each step, it will depend on your model.

First prepare your roast for searing. Using a sharp knife remove as much fat from the roast as possible. It is fine to leave some fat, but removing the fat will help keep your gravy from becoming too greasy. Next, place the roast on a sheet of aluminum foil to make clean up easier. Let roast warm-up to room temperature while creating the rub.
In a small bowl add the sea salt, rosemary, thyme, black pepper, garlic powder, onion powder, paprika. Whisk all the ingredients until well mixed.
Prepare the vegetables, onions, and garlic. First, peel the carrots and cut into 2" chunks then peel and cut the potatoes into quarters (if using baby potatoes, leave whole and wash thoroughly. Next, peel the onion and chop into 1" pieces. Finally, peel and chop the garlic cloves into 1/4" pieces.
Using a brush, cover the entire roast with 2 tsp of the olive oil. Next, sprinkle the prepared rub on the roast and be sure to apply to all sides of the roast. Finally, massage the rub into the roast using your hands (make sure to wash hands when done) until it is fully covered and ready to sear.
Press the SAUTE button on your instant pot (reminder - I use an Instant Pot DUO60 6 Qt 7-in-1 Multi-Use Programmable Pressure Cooker, you may have to read the directions for your instant pot if they are not the same) and the ADJUST key to toggle to the More (+) setting. Wait for the pot to say HOT. When HOT is displayed, add 2 tbsp of the olive oil into the pot, let the oil heat to almost smoking. When the oil is hot add the seasoned roast to the oil and sear for about 2-3 minutes on each side. Place the seared roast onto a plate. Press CANCEL on the Instant Pot.
Select SAUTE' again and ADJUST to the REGULAR setting. Add the remaining olive oil and let the oil heat before adding the onions. Saute' the onions for about 4 minutes or until they are almost translucent. When onions are done, add the chopped garlic to the instant pot with the onions and saute for another 2 minutes.
While the Instant Pot is still on SAUTE, add the red wine (or 1/2 cup beef broth) to the sauteed onion and garlic in the instant pot, using a spoon stir the mixture to scrape all of the browned bits off the bottom of the pot. Then, add the broth, Worcestershire sauce, and tomato paste stir the ingredient to mix them all together in the pot. Press, CANCEL on the instant pot. Now, settle the roast into the sauce and top with carrots and potatoes. DO NOT STIR! You want the meat in the sauce and the carrots and potatoes on top.
Place the lid on the instant pot and press the MANUAL button, select HIGH, and make sure the steam release handle is in the SEALING position. Set the timer to 35 minutes and let the roast and vegetables cook. After the cooking is finished allow the instant pot to naturally release (do not touch the release handle on the vent) for 10 minutes, then using an oven mitt and long-handled spoon push the steam release handle to the VENTING position and allow any remaining steam to release completely before you open the pot. Press CANCEL. Carefully, using oven mitts remove the lid.
Transfer the roast to a cutting board and the carrots and potatoes to a serving dish, Tent both with aluminum foil to keep warm. Let the roast rest for at least 10 minutes while you prepare the gravy.
Press SAUTE' and ADJUST to select LOW setting. In a small bowl whisk together the 1 cup of beef broth and the cornstarch. Slowly, while whisking liquid in the instant pot add the cornstarch mixture. Whisk until gravy until it thickens and let boil for about 3 minutes. Press CANCEL and unplug instant pot. Transfer the gravy to a gravy boat.
